

Winemaking
The grapes for our Blanc de Blancs were whole bunch pressed, wild fermented followed by full malo and tiraging in March 2018. All our sparkling wines are made using the traditional method, with the Blanc de Blancs seeing a minimum of six years tirage before being disgorged and released. The first disgorging of this wine was December 2023. A low dosage of 4g/l allows the elegant flavours of the fruit to shine through. This wine will develop beautifully under cork, with 2-3 years showing its brightest potential.
Tasting Notes
Red apple, lemon blossom and lovely biscuity autolysis presage this wine’s opulence. Structural and balanced with fine tannins, the slightly higher dosage of 4g/l vibrantly delivers a rich, buttery palate, with hints of sherbet and lemon curd. A wine that will develop brilliantly under cork.

Fresh Tasmanian oysters are always perfect accompaniment for the Delamere Blanc de Blancs.

'100% free-run chardonnay from F-block. A minimum of five years tirage for this wine with a first disgorging in December 2023, dosage 4g/L. Pale straw with a fine, energetic bead and aromas of apple, citrus fruits, fresh brioche, sea spray, ozone, baked spiced apples and stone. Fresh shortbread tones on the palate with a crystalline acid focus, abundant energy and biscuity overtones as the wine finishes dry and stony pure, willing me to pour another glass. Wonderful drinking."
