Winemaking
Hand harvested and gentle whole bunch pressing of the fruit for the 2017 Cuvée has produced a wine of impressive balance and finesse. The assemblage consists of 60% Chardonnay, 40% Pinot Noir. The season delivered fruit with excellent depth of flavour and high natural acidity. Four and a half years of tirage age has achieved compelling complexity. With just 3g/l dosage, the fine quality of this wine rests on the elegant but powerful fruit characteristics.
Tasting Notes
Lemon zest and early season strawberries complimented by delicious brioche autolysis deliverers outstanding depth and complexity. Structural and balanced with fine tannins, the modest dosage of 3g/l vibrantly delivers a palate of sherbet, lemon curd and refined minerality. A wine that will develop brilliantly under cork.
Food matches
In its youth, this wine is served best with a selection of fresh Tasmanian Seafood. With age the Cuvee is best accompanied with Peking Duck, spatchcock or poached quail eggs.
